The Queen variety is grown almost nowhere else on earth. Tripura's terraced hillsides give it the heat and the drainage it loves; the result is a pineapple that's low in acid, high in fragrance, and sweet enough that no sugar needs to be added at any stage of drying. Our farmer Tonkho Marak slices them within hours of harvest and dries them gently — no preservatives, no sulphur. Eat them straight from the pack, or stir them into yoghurt; they soften beautifully overnight in cereal.
