Bhoot Jolokia translates to "ghost chilli" — and the name is earned. Grown on terraced plots above 1,200 metres outside Kohima, these chillies come from farmer Khrieliezo Dawhuo, who still follows traditional cultivation methods passed down through generations. The chillies are slowly sun-dried, then blended into a rich paste that captures both their smoky aroma and creeping heat. The flavour arrives first — earthy, savoury, almost fruity — then the fire follows.
